its catering activity, SERVAIR composes the meals, prepares them and makes
up the trays.Higher up from manufacturing, SERVAIR’s “Product
and Marketing” teams apply themselves to preparing new recipes and
varied menus. These proposals are validated during the presentations of
products organised regularly with customer companies. The customer’s
choice is then sent to the production units.Two essential stages form
the catering trade: after receiving the products, food production transforms
the raw food ingredients into meals by means of “hot cooking”
and “cold cooking”.The services workshop assembles the elements
making up the trays loaded on board the aircraft (trays, cutlery, etc…).
This workshop also verifies that these services comply with the specifications
of each customer.These units respect the industrial procedure known as
“forward march”. This fundamental concept means that any product
entering into the composition of meals must never go backwards in the
manufacturing chain thereby guaranteeing total compliance with the rules
of hygiene and cleanliness.To adapt to customers’ requests, SERVAIR
